Israeli and German researchers publish on how "industrialized diets" and food additives break down the endothelial layer in our gut and contribute to all "autoimmune" disease. I wrote about this in the Endothelial Health Program in 2008, and would suggest that the immune system is just doing its job by going after plasmic particles, and the reaction is not really "autoimmune". We need a strong endothelium in the gut and brain. The real message....stay away from processed foods, and eat a whole food diet. Your endothelium will thank you! Joan
